Blakesville Creamery is a farmstead creamery, meaning the cheeses are made by hand on the same farm where the animals are raised and their milk is collected. Their goal is to humanely raise healthy goats using sustainable farming practices and to produce the highest quality of handmade artisan cheeses. Because of this, care and attention to the purity, quality, and flavor of the milk are critical to the production process. Their cheeses are ripened naturally, focusing on developing characteristic flavor and texture and eschewing shortcuts or techniques that would affect quality. Despite the grungy name, this cheese is pristine! An homage to the French Chabichou (pronounced, you guessed it, "shabby shoe"), Shabby Shoe nails the thin wrinkled rind, gooey creamline, and incredibly light texture of the original. The taste is bright, featuring notes of citrus, sweet cream, and grass, with a short, clean finish–reminiscent of fleeting clouds on a summer day. With this delicate chèvre, Blakesville Creamery connects the dots between the Loire Valley and the shores of Lake Michigan.
