Here’s what you need: slow-cooked, deeply flavorful ragù, fresh pasta, and a blend of cheeses that taste great and melt to creamy perfection. Achieve the right balance of sauce, filling and pasta.     Our kitchen has been developing this recipe and it’s the real deal. Using the best ingredients sourced from the store and Pike Place Market — Italian San Marzano tomatoes, freshly ground beef from Don and Joe’s Meats, Cascioppo Bros Italian sausage — our kitchen team simmers the ragù that’s at the heart of our meat lasagna for six hours. Then, using fresh egg pasta sheets, they layer an herby ricotta cheese mixture with fresh basil and oregano with the ragù to create a five-layer lasagna. We freeze the lasagna in oven-ready trays. It bakes in an hour and feeds two hungry adults (four if served with sides). Our vegetarian version uses a house-made marinara and doubles up on the herby ricotta.
