Made with the famous Tonda Iblea olives of the Chiaramonte Gulfi region, Spedalotto Tonda Iblea is a harmonious sensory experience: its green and ripe flavors are in perfect balance. The aroma and flavor are full of fresh green tomato and wild herbs, along with a fruity finish, like taking a bite of a ripe tomato. A delightful complexity is extracted from this single varietal olive, a result of the craftsmanship that goes into the cultivation of rich soil.

The Fois family olive farm was established in Alghero in Sardegna at the start of the 1900s and has been producing olive oil for four generations. Their 2023 oil, Accademia Olearia’s Olio Novello is the distinct color of hay just beginning to turn from green to straw. It’s soft, approachable flavors are delicately balanced with a fresh, green tomato aroma and fruity flavor. The texture is buttery with hints of spice.

Both of these oils are only available in limited quantities. Their cling to bread, greens, and vegetables is unparalleled.
