Often, we have the honor of introducing our customers to great new products, but sometimes, our amazing customers return the favor. Recently, a customer introduced us to Casa Bosques and we were sold after sampling just a few bars. Casa Bosques is a passion project by Rafael Prieto, a Mexican-born designer known for his creative and multidisciplinary approach to design. He divides his time between his Manhattan design studio and Mexico City. Prieto launched his innovative craft chocolate line, sourcing primarily from a smallholder ranch in Pichucalco, Chiapas.

In 2023, retail chocolate sales in America exceeded $20 billion. Most producers buy pre-made chocolate from industrial-scale manufacturers and package it under their own label. Not surprisingly, the best chocolate in the world does not come from the industry goliaths but tiny, tree-to-bar producers, and Casa Bosques is one of the finest. They collaborate with farmers to ensure each heirloom bean meets the highest standards and source Criollo cacao varieties grown in lush, canopied forests — ideal conditions for this highly coveted type of cacao. Casa Bosques’ chocolate contains only two ingredients: heirloom cacao beans and organic cane sugar, which they roast and grind in small batches for optimal flavor.

When it comes to creating unique combinations of flavor and texture in their bars, creativity rules. In contrast to the purity of their chocolate, all ingredients are fair game. They pay no heed to convention, instead, they focus on craftsmanship and the power of imagination. Get things started with their traditional 74% bar…move into additions like sea salt, cardamom or pink peppercorn. Feeling more adventurous? Go with brown malt,  toasted buckwheat or puffed quinoa/turmeric/coconut!
