Founded in 1931 by cheesemaker Théodore Réaux, Fromagerie Réo is one of the few remaining producers of traditional beurre de baratte. Located in Lessay, Manche, the dairy is committed to supporting the local economy and promoting sustainable practices. It sources milk from approximately forty producers located within a 30 km radius of the facility. Since 2016, Réo has been part of the Les Maîtres Laitiers du Cotentin group. Réo’s beurre de baratte is manually molded and offered under the brand Le Gaslonde. Made from local pasteurized cream, fleur de sel from Île de Ré, and cultures, the butter naturally varies in color throughout the year—from a deep yellow in spring, due to chlorophyll and beta-carotene in fresh grass, to a pale ivory in winter.
