True Parmigiano-Reggiano can only be made in the narrow stretch of countryside between the Po & Reno rivers in Northern Italy. Rigorous standards of production specify which grasses the cows can eat, fat content, size of the wheel, milk temperature and more. Only wheels that meet these standards earn the right to be branded with the official seal of the consortium at 18, 24, and 30 months. This seal is your assurance of quality, and the process the cheese goes through to earn this seal is the reason little has changed about Parmigiano-Reggiano in over nine centuries.

Only wheels with a superior flavor profile earn the right to age beyond the standard 18 months.  The extra time concentrates the flavor and adds crystallization to the texture. The uses of this amazing cheese are endless.  You can grate or shave it over just about anything except your fish. . It is also fantastic as a table cheese.  Break it into small chunks and serve it with charcuterie, fruits, nuts, or a drizzle of aged balsamic vinegar.  When there is no more cheese to grate, use the rind to enrich the flavor of stocks, soups or braises.
