This Parmigiano Reggiano begins with the milk of cows that graze among the mountains of Benedello di Pavullo, one of very few Parms made exclusively from mountain pasture milk. After 13 months of aging at the San Pietro dairy, Giorgio Cravero selects wheels to move to his cheese hall in Bra, Italy, where his family has been aging Parmigiano Reggiano since 1855. Cravero continues to age the cheese for a minimum of 24 months. During this time, he and his team flip the wheels every other week, much more frequently than is typical for Parmigiano Reggiano. The result is a cheese with an exceptionally smooth, creamy texture. With notes of butter, tropical fruit, grass, and freshly baked bread, this Parmigiano is equally at home on a cheese board as it is in your favorite dish. Pair it with a sparkling white wine for a simple indulgence!
